Exposure Compensation
When you have a really light or dark colored subject, your camera thinks it's the amount of light that's causing the subject to appear light or dark, so it tries to compensate for it and the result is an under-exposed (too dark) or over-exposed (too light) photo. The camera also gets confused when a subject is backlit. You can tell the camera to make the photo lighter or darker with "Exposure Compensation".
